Larrabetzu is part of a much wider process that drives food sovereignty in the municipality. The municipality has a strong link to the earth and has therefore shown particular interest in using organic matter to produce compost. The public authorities have launched a number of campaigns encouraging home composting, which have been well received and figures show that there has been a sharp rise in home composting.
Approximately 220 families (40% from the city centre), 5 restaurants (including Azurmendi), a bakery and a greengrocers are taking part in the project. 3 Baserritarras collect approximately 75 tonnes of organic matter every year and use it on their land. The Baserritarras receive a small sum of money for their work, meaning that they have a more stable income every month.
