Promote the development of organic agricultural production.

Improve the quality of the population's diet.

To encourage the incorporation of fresh, local and seasonal organic products in the menu of school and social-health canteens.

Establish institutional collaborations that reinforce the established objectives.
It is part of the "Action plan for the development of organic production in the Canary Islands", the result of a participatory diagnosis process initiated in 2010 with the involvement of organic producers and the public administration.
It emerges in 2013-2014, as a pilot project developed in a school in each of the 7 Canary Islands, with the aim of expanding its scope in the following years. Currently, it is consolidated as a program, and continues to evolve and grow.
There are currently 51 eco-canteens.
